Not an expert, but I do believe aging maximum 65 is tied entirely to leveling up though I can't give specifics. There's a way to remove up to 10 years with the Temple of Avo in Knothole Glade. Ohter then that the only way, outside of mods, to stop aging would be to stop leveling, which is doable as I did a run without reaching the age of BTW, you can't die of old age so don't worry about that happening.
